Clams
Whether
the flavorful star of your favorite chowder or the
perfect chilled appetizer, clams are one of the most
versatile of shellfish.

Countnecks
About 2” in diameter, Countnecks are great for
sauces and in pasta dishes. Average 10 per lb.

Littlenecks
The most tender of the hardshells, littlenecks are
often enjoyed on the halfshell and in clams
casino. At about 3” across, they average 5 clams
per lb.

|
Cherrystones
Cherrystones average about 4” across and are often
used on chowders. Average 2 per lb.

Quahogs (pronounced ko-hog):
Also known as a chowder or surf clam, the
quahog is the big daddy of clams, averaging 4 1/2”
– 8” in diameter. Quahogs are most often used for
stuffing, or chopped or ground in chowders,
bisques and sauces. Average 1 per lb.

Steamers
Steamers
belong to the soft shell group of clams (though
their shell is more thin and brittle than soft.)
They have a distinctive oblong shape, a protruding
siphon or “handle,” and should not be eaten raw.
They should also be thoroughly cleaned before
cooking to rid them of potential grit. Perfect
steamed and dipped in melted butter, steamers
average 1 1/2” in length and number 15-20 per lb. |

Our cultivated Blue Mussels from Prince Edward
Island are truly one of the treasures of the sea.
Reasonable priced, easy to prepare and perfectly

A member of the trout/salmon family, Arctic Char
appeals to those who enjoy trout but who may find
salmon a bit too strong. The moist light flake

Bluefish one way or the other. It’s firm,
somewhat oily meat and “gamey” flavor make it
ideal for the grill and superb smoked.

Chilean Sea Bass Fillets
With its white fine
textured flesh and melt-in-your-mouth flavor, it
is no wonder Chilean Sea Bass has become so
popular around the globe. Good on the grill,
broiled, poached or sautéed. Avoid heavy sauces
that compete with the fish’s own full flavor.

Flounder
Soft, white meat
with a sweet, delicate flavor, flounder is
excellent battered, fried or simply baked. Use
wine, sauce, other liquids or soft vegetables to
keep thinner fillets from becoming dry.

Gray Sole
Smaller
than flounder, gray
sole
boasts all of the sweet, mild flavor that makes
sole so
popular. Its meat is extremely moist and soft,
with an appealing silkiness. Gray
sole is perfectly suited for interesting sauces
and spices. It is also ideal battered or fried.

|
Grouper
Groupers have a mild
but distinct flavor, somewhere between bass and
halibut. Combined with its firm texture, this
versatile fish can be fried, grilled, skewered or
used in chowders and soups. Grouper is very
forgiving—it can be overcooked and still remain
moist.

|
Haddock Fillets
Haddock’s delicate
flake and slightly sweet taste give it a
wonderful, melt-in-the-mouth appeal. The lean
meat’s firm yet tender texture make it suitable
for frying, sautéing and baking. It’s also
perfect for soups and stews.

|
Halibut Fillets
The
largest of the flat fish (occasionally weighing in
at over 600 lbs.), halibut is extremely versatile,
and the thick meaty flesh holds up well to a
number of cooking methods and sauces. Try it
marinated and skewed as kebabs. Also available as
steaks.

Mahimahi
With a sweet mild flavor similar to swordfish, the
lean meat of the Mahi is fairly firm in texture
and has large moist flakes. Mahi is great for the
grill. Though it is not an oily fish, the meat
stays moist and can hold up even to blackening.
Mahi’s thick skin should be removed before
cooking.

Lean and moist, the
red snapper has a sweetly mild but distinctive
flavor and it is suitable to just about any

Yellowfin Tuna Steaks (sushi grade)
Like swordfish, tuna is a firm and relatively
fatty fish making it a good option for the grill.
Careful though, overcooked tuna is tough and
tasteless. When broiling, searing or grilling,
treat tuna like a sirloin steak: it’s best if done
on the rare side.
